Honey Soy Salmon

(makes 8 servings)

  • 2 pounds salmon fillets
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons honey
  • 1 lemon, juiced
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  1. Mix marinade: Whisk together soy sauce, honey, juice from 1 lemon, minced garlic, and olive oil in a shallow dish or zip-top bag.
  2. Marinate: Add salmon fillets, coat well, and refrigerate for 15-30 minutes only.
  3. Cook: Bake at 400°F for 12-15 minutes, or pan-sear skin-side down 4-5 minutes, then flip 2-3 minutes, until it flakes easily.
  4. Rest and portion: Let rest 2-3 minutes, then portion into containers for the week.
