- 2 medium russet or gold potatoes, grated (about 2 cups)
- 1 small carrot or zucchini, grated
- 1/2 small onion, grated or finely minced
- 2 eggs
- 2 tablespoons oat flour or almond flour (to bind)

- Grate potatoes, carrot, and onion.
- Place in a clean towel and squeeze out as much moisture as possible — this is key for crispness.
- In a large bowl, combine grated veggies, eggs, flour, and seasonings. Stir until evenly coated.
- Form into 10 small patties (about 2 tbsp each) and flatten slightly.
- Lightly spray the air-fryer basket with cooking oil.
- Cook at 400°F (200°C) for 10–12 minutes, flipping halfway.
