Harvest Chicken & Apple Salad

(makes 2 servings)
  • 2 cups cooked chicken breast, diced or shredded
  • 1 small crisp apple, chopped
  • 6 cups baby spinach or mixed greens
  • 2 tablespoons walnuts or pecans
  • 2 tablespoons crumbled goat cheese or feta
Optional quick dressing
  • 2 tablespoons olive oil + 2 teaspoons apple cider vinegar + pinch of cinnamon
  • Place spinach in a large bowl.
  • Add chicken, apple, nuts, and cheese.
  • Drizzle with dressing and toss to combine.
  • Enjoy!
