(makes one serving)
- 1/2 block (4 oz) firm tofu, cubed
- 1/2 avocado, mashed
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon hemp seeds
- 1/4 cup cucumber, diced
- 1/4 cup cherry tomatoes, halved
- 1 tbsp chopped fresh basil or cilantro
- salt & pepper to taste
- In a bowl, mash the avocado and mix with lemon juice, mustard, salt, and pepper.
- Add cubed tofu, cucumbers, tomatoes, and hemp seeds.
- Toss gently and top with fresh basil or cilantro.
- Enjoy as-is or serve in lettuce wraps!
