Edamame and Avocado Power Bowl

(makes one serving)

  • 1 cup shelled edamame (thawed from frozen or pre-cooked)
  • 1/2 ripe avocado, diced
  • 1/2 cup shredded carrots
  • 1/2 cucumber, chopped
  • 1/4 cup sauerkraut or kimchi (great for gut health!)
  • 1 tablespoon tahini
  • 1/2 lemon, juiced
  1. In a large bowl, combine edamame, avocado, carrots, cucumber and sauerkraut
  2. Drizzle with tahini and lemon juice
  3. Toss gently to combine
  4. Enjoy!
