(Makes 6-8 servings)
- 1 1/2 cups plain Greek yogurt
- 2 tablespoons cream cheese
- 1 1/2 cups of summer berries (strawberries, blueberries, raspberries, etc.)
- *if using strawberries, slice lengthwise
- 1 teaspoon vanilla
- 2 tablespoons honey
- 1/4 cup coconut flakes
- In a blender, blend Greek yogurt, cream cheese, and vanilla. Stir in 2 tablespoons of coconut flakes.
- Line a small baking sheet with parchment paper and pour the blended mixture over top. Spread the mixture until it is evenly distributed. The mixture should be 1/4-1/2 inch thick when spread.
- Evenly place berries over the yogurt mixture and sprinkle with remaining coconut flakes.
- Freeze for a minimum of 1-2 hours, or until firm. Cut into pieces once firm.
