(makes 4 servings)
- 1 pound lean ground turkey or lean ground beef (93/7 or leaner)
- 8 whole grain tortillas (small, taco-size)
- 1/2 cup shredded cheese, reduced-fat
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 cup shredded lettuce
- 1 cup diced tomato
- 1/4 cup diced red onion
- 1 avocado, sliced
- nonstick cooking spray or avocado oil
- In a bowl, mix the ground turkey or beef with the garlic powder, onion powder, chili powder, cumin, and salt until just combined. Divide into 8 equal portions and roll into loose balls.
- Heat a large skillet or griddle over medium-high heat and lightly coat with cooking spray or avocado oil.
- Press a meat ball onto one side of a tortilla so it sticks. Carefully place the tortilla meat-side-down onto the hot pan and immediately smash flat with a spatula so the meat spreads to the edges of the tortilla.
- Cook undisturbed for about 4 minutes, until the meat is deeply browned and cooked through, pressing occasionally to keep good contact with the pan.
- Flip the tortilla so the meat side is up. Sprinkle each with a portion of the shredded cheese and let it melt slightly while the tortilla crisps on the bottom, about 1 minute.
- Transfer to a plate and repeat with the remaining meatballs and tortillas, wiping the pan between batches if needed.
- Top each smash taco with shredded lettuce, diced tomato, diced red onion, and a slice of avocado.
