Meatball Parmesan

It’s Coach Amie back with Forking Made Easy: a collection of recipes to make eating healthy taste good. This week’s menu:

Meatball Parmesan

(Makes 8 servings)

  • 2 pounds ground turkey, chicken, or beef

  • 2/3 cup seasoned breadcrumbs

  • 1/3 cup grated parmesan

  • 2 eggs

  • 2 cloves garlic, minced

  • 1 tablespoon tomato paste

  • 2 teaspoons Italian seasoning

  • 1 teaspoon salt

  • 1 jar marinara sauce

  • 1/2 cup shredded mozzarella

  1. Preheat the oven to 350 degrees.

  2. In a large mixing bowl, combine ground meat, breadcrumbs, parmesan, eggs, garlic, tomato paste, Italian seasoning, and salt. Form into 8 baseball-sized meatballs.

  3. Place meatballs onto a nonstick baking sheet and bake for 50-55 minutes or, until meatballs are cooked through.

  4. Remove the meatballs from the oven when cooked through and place them into a 9×13 casserole dish. Top with a full jar of marinara sauce and cover with mozzarella cheese. Place back in the oven and cook until cheese has melted and sauce is warmed through.
