Hummus Bowls

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features: Quick and Easy Hummus Bowls. Full recipe is posted below.


(makes 1 serving)

  • 2-4 tablespoons of your favorite hummus

  • 1 cup diced chicken or tofu

  • 1 small cucumber, sliced

  • 2 tablespoons red onion, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup Kalamata olives, optional

  • 2 tablespoons feta cheese, crumbled

  • 2-3 cups mixed greens

  • 1/2 cup pre-cooked brown rice or quinoa

  1. Place mixed greens in a large bowl. Top with remaining ingredients and enjoy!
