Hot Honey Chicken Power Bowl
(makes 2 servings)
- 2 cups shredded rotisserie chicken
- 1 cup cooked quinoa or brown rice
- 1 cup roasted or steamed broccoli
- 1 cup shredded carrots
- 1/2 avocado, sliced
- salt and pepper
Hot Honey Drizzle
- 2 tablespoons hot honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- salt and pepper
- Warm the shredded rotisserie chicken in a skillet over medium heat.
- Divide quinoa or rice between two bowls.
- Top with warm rotisserie chicken, broccoli, carrots, and avocado slices.
- In a small bowl whisk together hot honey, lemon juice, Dijon, salt, and pepper.
- Drizzle the hot honey sauce over the bowls and toss lightly before eating.
