Hot Honey Chicken Power Bowl

(makes 2 servings)

  • 2 cups shredded rotisserie chicken
  • 1 cup cooked quinoa or brown rice
  • 1 cup roasted or steamed broccoli
  • 1 cup shredded carrots
  • 1/2 avocado, sliced
  •  salt and pepper

Hot Honey Drizzle

  • 2 tablespoons hot honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • salt and pepper
  1. Warm the shredded rotisserie chicken in a skillet over medium heat.
  2. Divide quinoa or rice between two bowls.
  3. Top with warm rotisserie chicken, broccoli, carrots, and avocado slices.
  4. In a small bowl whisk together hot honey, lemon juice, Dijon, salt, and pepper.
  5. Drizzle the hot honey sauce over the bowls and toss lightly before eating.
