7 Minute Protein Pancakes

It’s Coach Amie back with Forking Made Easy: a collection of easy-to-follow recipes to make eating healthy taste good. This week’s menu features: 7-Minute Protein Pancakes.

*Bonus: you can choose from two kinds: Banana or Cottage Cheese. Pair with fresh fruit, almond butter, cinnamon … have ’em your way and get your kiddos involved!


COTTAGE CHEESE PANCAKES

(serves 1)

  • ½. C. Rolled oats

  • ½ C. Cottage cheese

  • 2 Eggs

  • ⅛ t. Sea salt

  1. Add all ingredients to a blender and blend for 30 seconds.

  2. Pour batter onto a heated skillet and cook for 2-3 minutes each side.

PEANUT BUTTER PANCAKCES

(serves 1)

  • 1 Medium ripe banana, mashed

  • 2 Eggs

  • 4 T. Powdered PB such as PB2

  1. In a mixing bowl, mash banana and add remaining ingredients. Mix well.

  2. Pour batter onto a heated skillet and cook for about 1 minute on each side.
