(makes 4 servings)
- 4 large portobello mushrooms
- 1 pound lean ground beef or turkey
- 2 cups spinach, chopped
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan
- olive oil
- salt and pepper, to taste
- Preheat grill to medium heat.
- Gently remove the stems from the portobello mushrooms and wipe the top and bottom with a damp paper towel to remove any dirt.
- In a medium skillet, cook ground meat and garlic until browned. Stir in spinach until wilted. Remove the skillet from heat and mix in the Parmesan cheese.
- Brush mushrooms with olive oil and sprinkle with salt and pepper.
- Fill each mushroom cap evenly with ground meat mixture.
- Grill 10-12 minutes until mushrooms are tender and heated through.
