ONE POT SWEET & SPICY TACO BOWLS
2 TBSP Olive Oil
2 Onions, minced
2-3 Bell Peppers, chopped
1-2 Sweet Potatoes, chopped
3 lbs Ground Beef or Turkey
1 Can Chipotle Peppers in Adobo Sauce, minced
2 Cans Black Beans (or your choice of beans)
1 Cup Chicken Broth
2 Cups plain Greek Yogurt
4 TBSP Chili Powder
4 TBSP Cumin
2 tsp Salt
Part One: Heat the tablespoon oil in a large Dutch oven or stock pot. Add 1 onion and the ground meat; as the meat cooks, add the 2 TBSP Chili Powder and Cumin, 3-5 chipotle peppers, and salt. Cook until the meat is browned and fully cooked. When the meat is saucy, transfer to a large bowl and set aside.
Part Two: In the same pot, add the oil, other onion, veggies, and remaining spices. Saute for a few minutes until the vegetables are mostly soft. Add enough broth to barely cover the vegetables and simmer for 10 minutes or so, until the vegetables are soft and the mixture has thickened. Add the beans, meat, and yogurt. Stir until creamy.
Boom! Now you can eat this guy here as is, add it over rice, or make burritos!
